Can I take a cheap, $39 select grade brisket and make it worth a damn? In this recipe I use 4 techniques to help improve the end result of smoking a select grade brisket vs. my usual choice or prime grade brisket.

Would you use a $39 brisket for Pastrami or Corned Beef?
"Jesus" means "Jehovah is salvation". This is the name of Christ real christians are hated for.
"HalleluJah" means "Praze Jah" (Jehovah).
Psalm 83: 18: "That men may know that thou, whose name alone is JEHOVAH, art the most high over all the earth."
The problem is Devil runs the world. He is lier and murderer. This is the reason why Hitler got the power, but Christ was executed as "blasphemer" and "rioter" by denunciation of clergy.
That's why we've got the Gospel about the God's kingdom. Jehovah would put everything in order. The dead will be resurected and we'll meet our beloved ones again! 🙂
Thanks for the experiment video, as others have said and it’s more true these days most of us have to be selective on when to spend the extra money.
I’ve done most of the same things you have but caught a couple tips such as the braising. I’ve just been wrapping in foil on a lower cut and then throwing in a cooler. I’m going to give your idea a try.
What a great video. Thank you, Matt!
What kind (brand) of gloves do you use doing BBQ, etc?
Done them side by side and the cheaper it is, the more work it is to get it okay. Prime isn't cheap but it's worth it for special occasions.
It would have been nice if you won BBQ Pitmasters with that brisket
#MakeBrisketCheapAgain. This is the first step, brother! Great job in finding that cut and making something of it!
Love your stuff! Cant go wrong in the Church.
I need a shirt like that.
I have thrown cryovac meats away thinking they were bad because they stink if you let them stay in the fridge too long. That thing had to smell bad after 30 days.
Thank you! How long would you age a brisket in cryovac from frozen?
Cool experiment. But I’d rather pay $4-5 for Costco prime and not wait a month and have to inject.
Love Meat Church videos but I just about spit my drink out when he said his goal is to not push product. 😂😂😂
Great video Matt!
The mark of a good cook is taking a “sub par” quality cut and making it a supreme bite. Well done.
No!
Brisket looks killer Matt
The only briskets around me are choice. Kroger and Walmart both carry them. I've never seen a select or a prime in my neck of the woods. The prices vary from $39-80, depending on whether or not there's a sale. When it's on sale, I'm likely to pick it up for my church (they have a Smoke Daddy vertical pellet smoker and use it for church luncheons). But it's doubtful I'll ever see anything other than choice where I live.
I gotta say —if a fella is tight on $$. Cheap brisket done right make him a good meal.
how do I order that shovel
Isn't this what bbq is about ? Like it was about taking cheap meat and making it better. I would think it would be great regardless of the grade of meat. That is if it's done properly of course
Commenting before I watch the video. I’ve done much worse at cook offs with prime brisket than I’ve ever done with regular old discount grocery store brisket…. Proceed to the video…!
Almost exactly the way i do my HEB briskets except i cook fat side down in the pan the entire time. I have been using your injection for a long time. Usually mix with HEB sprite, will try beef broth the next time. I always have a brisket in my beer fridge and have gone as 60 days. Excellent video. Thanks
Whats a cryovac? Is that just a vacuum seal?
The first brisket I ever cooked was a select. I paid $36 and it was delicious..more expensive doesn't always mean better results..alot of it depends on technique and experience
Love the video keeping it real thank mr Pittman
My fav channel, but why still wrapping brisket, when Goldees is crushing without until rest?
Sure wish you would do a fire management video! Thanks for posting this video Matt. I might just do a brisket for Momma this weekend….it is her weekend and she loves brisket. Take care kind sir!
I have cooked a lot of briskets. I still say one of the best briskets I ever had was a select. I also believe anybody can turn out a great prime brisket. But It takes skill and experience to turn out a great select. Cany you elevate something with your cooking? Awesome video. I always appreciate it when professionals help nonpros save money. Thank you.
One of the best briskets I’ve ever made was select from Tom Thumb
Matt, could you do a video (unless you already have one I just haven’t seen) on doing a Brisket Flat. I can pick up a brisket at my sams which is a little bit of a drive for me for like $80-$100 but i have found my local grocery store will typically have what they label as a whole brisket which is actually just the Flat. As a newb to the craft I would love to get your direction/input on doing that cut.
I just wait for meat to be on sale… so I usually have cheap brisket. Glad to know how to step it up.
Hello Matt, greetings from California, how many hours does it have to be in the smoker, and how much longer should it be wrapped in the aluminum foil?
You’re the man Matt thank you
Dang
I always inject. Then braise in tinfoil tray for the last few hours. Winner every time. Cheers from Canada.
"I don't like to push product " 😂
Love your videos! Just new to smoking and bought myself a pellet smoker. Talked to my local butcher. She said: "Before the influx of smokers came about, all the ribs were trimmed and used along side the brisket as hamburger. Now she can`t get enough brisket" lol
I'm from the midwest and would love to see your take on some pork steaks.
So funny I also found an excellent brisket at Walmart for almost the same price
Up here in Alberta Canada, we paying $8.99ish a pound
The sad thing is whether select or the best of the best of prime, after cutting slices brisket dries up super quick.
IMO, prime is best for ribeyes and strip steaks (but wow are they expensive now). Proper cooking wins with larger cuts like brisket. Thanks for verifying that thought, love these weekly videos.
Excellent Job Bro! I need a few bags of that injection. I’ll be sure to stop by the store Memorial Day weekend when I hit Texas and buy a few bags. I love cooking cheap briskets. They always come out great!
It's definitely a great way to start build some skills then move to the more expensive meats appreciate ya sharing always
Why couldn’t have this video last Saturday. I cooked a choice for the first time because Costco was out of prime and came out below the standard that my church allows it. 😂
