No don’t do this
When I use vinegar in my jerks I always stop my drying or smoking stage halfway and glaze it with my flavoring without the vinegar.
Return it to drying. The glaze protects the insides from drying out to crumbles.
It will also add lots more flavor.
I usually layer my flavors with my jerks and its the best way to make spicy jerky.
I also use this method for making dehydrated burgers for my camping trips. It rehydrates better because the glaze doesn't absorb the water but the insides do.
You get a fatty glaze taste outside and juicy inside. I've been doing it for almost 15 years.
I also make a surf n turf jerky. Dried shrimp powder coat the gaze before returning it to drying. You can also add some dehydrated lime.
I use that jerky for camping tacos. So good.
