hi! i want to ask the people who know how to cook better than i do: when you cook fish, in this video it looks like they didnโt use oil.. how do you make the skin not stick to the pan when you cook fish? the last time i cooked salmon skin on the skin stuck to the bottom of the pan ๐ญ๐ญ any tips would be appreciated!!

I fried the fish in 70% alcohol. Not only it gives that nice alcohol flavor, but also disinfects both the fish and the pan.
You should have used a larger pan that way you can waste TWO bottles of wine. ๐

What if you used water or grape juice for poaching the fish and saved the wine for meal?
