Hi! North Carolina here. The sauce needs to be made at least two weeks in advance. You guys made a western NC sauce. I like both eastern and western. The slaw we usually do cabbage sometimes a mix of green and red, carrot, salt, pepper, sugar, and Dukes Mayo. Sometimes a little relish is added.

real Carolina coleslaw is Dukes mayo,suger and ACV.
Like my fresh slaw and older slaw, kraut, kimchi. Just make sure there is plenty of pork on the plate too.
