One thing I've been trying to imitate for a while is Naf Naf Harissa and Skhug. Once I figure them out I'll eat the same salad bowl everyday for the rest of my life

That's a South Carolina sauce. I live in North Carolina and we use a vinegar base sauce.
Sounds good but, I don't care for yellow mustard. I would use REAL mustard for this.
