Caroline Manzo's pasta and potatoes with marinara sauce recipe (aka Pasta Patate)



You ever have one of those days where you’re just wiped out and want to make something quick, hearty and delicious? May we humbly suggest “Pasta Patate” — pasta and potatoes in marinara sauce.

THE RECIPE
INGREDIENTS
-the first step is to watch our marinara sauce recipe video (and if you already did — and bottled some at the time — go ahead and just watch for the joy of it):
-1.5 cups chicken broth (you can use vegetable if you prefer)
-One 14.5 oz can of fresh cut potatoes – cut in 1/2 or 1/4 – your choice (this is for the super-fast version; if you want to take your time, use fresh potatoes)
-1 large rib of celery, diced
-1 small onion, diced
-1/2 pound pasta of choice (rigatoni or shells are great!)
-Grated cheese to finish
-Salt and pepper to taste
-some olive oil

INSTRUCTIONS
-Boil the pasta
-sweat the onions and celery in olive oil
-add the marinara sauce, let heat for a few minutes
-add the broth, let heat for a couple minutes
-add everything else
-drain the finished pasta, put it in a bowl, pour the sauce over it, and serve

  2. Love watching you make all your different dishes. Being Italian, my family never made pasta with potatoes. We had pasta with a lot of things mixed in, but never potatoes. Looks really good. Need to make it for my family. Thanks for sharing, Caroline!
