Chaati Par Maans Lotna: Ingredients & Recipe Below:-
– Take 1 kg mutton in a pot/kadhai. To this add in 4 roughly chopped onions, 5 crispy fried brown onions, 1 tbsp each of salt, red chilli powder, Kashmiri red chilli paste, coriander powder, 12 garlic cloves, 2 tbsp ginger-garlic paste and 1 tsp turmeric.
– Now heat 7-8 tbsp mustard oil in a pan and add in 1-2 bay leaves, 2 inch cinnamon stick, 1 star anise, 2 green & 1 black cardamom, and 4 cloves. Let them pop for 30 seconds then add this oil on top of the mutton. Turn flame to high and close the lid for 4 minutes. Fry the mutton on high for 10 minutes.
– Dry roast 2 tbsp stone flower, 1 tbsp each of black peppercorns, cumin seeds, 1 tsp caraway seeds, 1 long pepper, 5 cloves, 1 mace, half nutmeg, 1 star anise, 2 green & 2 black cardamom and 2 inch cinnamon on low flame for 2.5 minutes. Now add in 2-3 strings of curry leaves and roast for another 45 seconds on low then blend all of it into a fine powder.
– Add this powder in the mutton along with a dash of water and fry on high for 12 minutes. Now add in 4 cups of hot water giving it a good mix and close the lid turning flame to low for an hour or so checking and stirring in between. Garnish with chopped coriander leaves.
