Healthy & Delicious Salted Caramel Brownies

o Equipment: 1 9×9-inch (23×23 cm) baking dish

Ingredients:
+ For the brownies:
• 9 x 9 inch (23 x 23 cm) baking tray
• 8 TBS (113g) unsalted butter
• 2 TBS (30 mL) olive oil
• 1 ¼ cup (250g) sugar
• 6 TBS (42g) unsweetened regular baking cocoa powder
• 5 TBS (37g) unsweetened Dutch process cocoa powder/ or Hersey special dark cocoa powder
• 1 TBS (5g) espresso powder/instant coffee (1.5 TBS)– should have but omittable
• 1/3 tsp (2g) Kosher salt
• 2 tsp (10 mL) vanilla extract
• 2 large eggs (cold)
• ½ cup (63g) flour
• 1 tsp (5g) baking powder

+ For the salted caramel sauce:
• 1 TBS (28.5g) unsalted butter
• 1/4 cup (55g) dark brown sugar
• 1 TBS (15 mL) heavy cream
• 1 TBS (15 mL) milk
• 1 tsp (5 mL) vanilla extract
• 1/4 tsp (1.5g) salt

Instructions:
+ To make the salted brownies:
1. Preheat oven to 340 F (171 C)
2. Spray bottom and side of a 9×9 inch (23 x 23 cm) baking tray with cooking spray. Line with parchment paper, leave overhung on 2 sides for easy lifting later.
3. Medium pan on medium heat
4. Add butter, oil, sugar, 2 types of cocoa powder, coffee, salt
5. Stir occasionally until butter is melted. Remove from heat
6. Add eggs, stir until eggs are not visible.
7. Add flour, baking powder. Stir until flour is not visible
8. Bake for 23-28 minutes or until toothpick comes out almost clean
9. Lift off the pan. Remove the parchment once slightly cool down.
10. Let’s cool down completely before drizzling sauce

+ To make the salted caramel sauce:
1. Small sauce pan over medium-high heat
2. Add all ingredients in.
3. Stir until butter melted. Reduce heat medium.
4. Soft boil for 6 minutes.
5. Remove from heat. Let cool down for a bit
6. Transfer to a squeeze bottle to drizzle on the brownies or you may try spooning on the brownies.
