Our Cheeseburger Cottage Pie is a cozy, comforting one-pot meal that is perfect to serve any night of the week! It’s a mash-up of a British classic: the cottage pie, and an American classic: the cheeseburger – because why the hell not?! π€© Best of all, it’s 100% freezer friendly – meaning you can batch cook this and have it for leftovers!
The recipe (serves 6-8)
π₯§ Cook around 400g of mash however you like and set to one side (we used microwave mash to save time and washing up!)
π Add 1 large diced white onion and 2 cloves of diced garlic to a frying pan and cook for a few minutes
π₯§ Add in 500g beef mince and cook out. Then add in 2 tsp each of ketchup and mustard, and 1 tsp each of paprika, black pepper, oregano, garlic and onion granules
π Then add one crumbled beef stock cube, and around 50ml of water
π₯§ Simmer for a couple of mins, stirring occasionally until everything is combined
π Add the mince to a lasagna dish and cover with a layer of plastic cheese slices
π₯§ Now add a layer of slices of gherkin and finish with your mash on top and 100g red Leicester cheese
π Bake in the oven at 180c for 20 mins until the cheese is golden and melted
π₯§ We served ours with more sliced gherkins on top, sesame seeds then a drizzle of big mac sauce
