Ingredients:
– 4 large potatoes, peeled and sliced thickly (about 1/2 inch) I left the skins on
– 500g (1 lb) minced beef
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 1 can (400g) diced tomatoes
– 2 tbsp tomato paste
– 1 tsp smoked paprika
– 1 tsp dried oregano
– 1 tsp ground cumin
– 1 beef bouillon cube crumbled
– Salt and pepper to taste
– 200g (7 oz) mozzarella, shredded
– 100g (3.5 oz) cheddar cheese, shredded (optional)
– 3 tbsp olive oil
– Fresh parsley, chopped (for garnish)

Serve with cornbread

Preheat the oven to 190°C (380°F)
Air Fryer 180°C (360°F)
Bake 20 – 25 mins until golden

Rik ! you have done it again, I just watched this video and it was 40 minutes until dinner time and all I had was 4 Lincolnshire Sausages, I had everything else, so I took the skins off and got to work and Hey Presto !! 7pm and it came out of the oven and it is absolutely SUPERB, thanks so much for the inspiration…..

  4. Oh Rik, I’ve got you sussed. You teach us all these wonderful and tasty dishes and most of us are recreating many of them regularly. However with most of your dishes, we ( ok me) can’t stop at one portion. You’ve got a plan for a diet club channel to run alongside this one 😝 😂 . Seriously you have one of the best cooking channels out there, well done.

  6. This is making me hungry! So good. I cannot eat potato skins anymore due to kidney stones. That brown skin has oxalates. 😮 I love me some potato 🥔! Man, you can cook! I will make this with peeled taters.
