Such a great rant about not worrying about making people mad . . . they can go eat somewhere else! (Or watch other videos!) That has always been my (very unprofessional–I'm a teacher, not a chef!) opinion, stated up front to my children and sometimes even my guests, and it is so nice to hear it from someone as respected as Chef Jean-Pierre!
I Love watching your videos and the Marry me chicken was fabulous. You havnt made a Parmentier as yet. These dishes are wonderful especially the Salmon Parmentier.

i really wish you would show everyone how to make a true stock. not by using $10.00 in vegetables but by the way it was done when YOU Chef first started .to this day after 46 years i still make my stock which will become a fabulous soup , its not garbage its free food for a stock .. so please Chef show the traditional way.
