Ingredients:
3 tablespoons Olive oil
2-3 Garlic cloves, crushed
2 lbs. (900g) Cherry tomatoes
Water
Salt to taste
Pepper to taste
1/2 teaspoon Chili flakes (optional)
Basil leaves, chopped
300g Pasta of your choice
Parmesan/pecorino

Directions:
1. In a large pan add olive oil and garlic. Cook over medium heat, stirring, for 30 seconds.
2. Add cherry tomatoes, stir well. Add 1/4 cup of water to prevent garlic from burning. Cook over medium-heat, stirring and mashing occasionally, for about 15-20 minutes, until the tomatoes are soft. If needed more water.
3. Meanwhile fill a large pot with water, add 1 tablespoon of salt and bring to a boil. Add your favorite pasta and cook to al dente.
4. To the sauce add salt, pepper, basil and red chili flakes and stir.
5. Add drained pasta and 1/4 cup of the pasta cooking water, toss to combine. Grate some cheese and serve.
