Chicken 59🍗Rice: Ingredients & Recipe Below:-
– Marinate 600 grams chicken with 1 tsp salt, half tsp black salt, 1 tsp red chilli powder, 3/4th tsp each of cumin powder, black pepper powder, 1 tbsp each of ginger-garlic paste, red chilli paste and 1 lemon juice. Let it sit for 30 minutes at least.
– Now add in 3 tbsp corn flour, 2 tbsp rice flour, pinch of baking soda and 2 egg whites or 1 whole egg. Mix well and coat the chicken pieces evenly then deep fry on medium flame for 7 minutes. Take them out and cool them then refry on high for 45 seconds. Place them on a wire rack.
– Heat 3 tbsp oil in a pan/wok and add in 3 strings of curry leaves. Let them pop for 30 seconds then add in 12 finely chopped garlic, handful of finely chopped coriander stems, 4-6 finely chopped green chillies, 1 tsp each of cumin seeds, red chilli powder and black pepper powder.
– Fry on high for a minute and half then add in the fried chicken along with 2 sliced onions and 1.5 tsp salt. Fry on high for a minute and half then add in 500 grams cooked rice followed by 1.5 tbsp tomato sauce and 1 tbsp red chilli sauce. Fry on high for around 2 minutes then garnish with coriander leaves.
