INGREDIENTS
2 pounds (908g) boneless skinless chicken thighs
salt and pepper to taste
4 tablespoons 60ml) extra virgin olive oil
1 large onion diced
6 cloves garlic minced
1 teaspoon crushed hot red pepper flakes
1 1/2 pounds (680g) cherry tomatoes halved
1 pound (454g) orzo
3 1/2 cups (840ml) low-sodium chicken stock
1 tablespoon (22g) honey
1 tablespoon dried greek oregano
2 tablespoons (30ml) lemon juice
1/2 cup (70g) kalamata or gaeta olives pitted, rinsed, and chopped
1/2 cup (57g) crumbled feta
1/2 cup minced flat-leaf Italian parsley

  3. Love the videos. I made this last night with shrimp instead of chicken thighs. As I'm an 84 year old widower (the wife gave out after 60 years) I adjusted the recipe for two. It turned out really great. The Kalamata olives, Feta cheese and lemon juice gave it a Greek flavor.Thanks again from Punta Gorda.FL

  4. I really enjoy your recipes. I tried to go on your website and was trapped w the screen asking for name and email. I didn't mind giving it but it would never accept info or advance. I was never able to read or browse for any length of time before it popped up again. Just letting you know. Maybe it's me, I don't think so though.
