Chicken Biryani Recipe
For Meat;
2 medium chicken (16 pieces)
1 cup full fat Greek yogurt
2 tbsp salt
2 tbsp kashmiri chilli powder
1 tbsp chilli flakes
2 tbsp coriander powder
2 tbsp cumin powder
1/2 tbsp turmeric
2 tbsp biryani masala(watch previous biryani video for recipes)
6-7 garlic cloves
3 inches ginger root
4 large tomatoes
2 green chillies
1 cup fried onions
1/2 cup mint chopped
1/2 cup coriander chopped
(Marinate for 30 minutes)
Use the same fried onions oil for meat. Add in a pot; heat and add meat. Cook until tender and oil separates.
For Rice;
1.5 kgs Rice (washed and soaked)
1 tbsp salt (to taste)
1 tbsp cumin seeds
3-4 pcs Star anise
1 tsp black peppercorns
7-8 pcs cloves
7-8 pcs green cardamoms
1 cinnamon sticks
3-4 bay leaves
6-7 lemon slices
2-3 green chillies
2 tbsp mint and coriander leaves
Put big pot of water over high heat, when start boiling add all ingredients and once water is fully boiled add soaked rice and cook until 80% done! Drain and set aside
For layering;
Place boiled rice on bottom.
Add cooked meat , tomato slices, lemon slices, green chillies, chopped mint and coriander.
Add another layer of boiled rice.
Pour food colour mixed with water and kewra water. Sprinkle Fried onions.
Put on dum for 25 minutes.
Mix and enjoy!
