Drums of heaven:
1. In a bowl marinate chicken lollipops with 1.5 tbsp ginger garlic paste, 1 tbsp green chilli paste, 2 tsp red chilli powder, 1 tsp black pepper powder, salt as per taste, 1 tsp soy sauce, 1 tsp vinegar, 2 eggs, 4 tbsp corn flour, 2 tbsp atta. Mix and marinate for 30 minutes.
2. Deep fry the chicken till it’s crispy and cooked from the inside.
3. In a saucepan heat 4 tbsp oil and add 1 tbsp chopped ginger, 1 tbsp chopped garlic, 2 chopped onions and sauté well till the onions are translucent.
4. To this add 2 tbsp schezwan sauce, 2 tsp soy sauce, 2 tsp green chilli sauce, 2 tsp ketchup, 1 tsp vinegar, 1/4 tsp jaggery powder, 1/2 tsp black pepper powder, salt as per taste. Cook this well and add 4 tbsp water along with 1 tbsp corn flour slurry.
5. Once everything comes together and you get your desired consistency, add some spring onions and toss the crispy chicken lollipop in the sauce in high flame for 1-2 minutes and garnish with more spring onions and sesame seeds.
