CHICKEN MAQLOOBA WITH EGGPLANT:
ingredients:
Egyptian rice: 1½ cup
Eggplants: 1 large
Potato: 1 medium
Chicken breast: 2 (500 gms)
Garlic chopped: 1 tbsp
White onion chopped: ½ cup
Olive oil: 3 tbsp
Tomato chopped: 1 cup
Red chilli chopped: 1 tbsp
Red pepper chopped: ¼ cup
Yellow pepper chopped: ¼ cup
Tomato paste: 2 tbsp
Black pepper powder: ¼ tsp
Turmeric powder: ¼ tsp
Cumin powder: ¼ tsp
Salt: 1 tsp + ¼ tsp
Cherry tomatoes: 1 cup
