  1. I add a shallot with the mushrooms roasted it with the butter and garlic i add white Marsala cooking wine and add a tablespoon of flour to the chicken broth whisk it in the broth add it in after the wine cooks down for a min than let it thicken its perfect 👌

  2. There are dry and sweet versions of Marsala. I prefer the sweet but use ½ cup versus ¾ cup.
    Goes well with pasta and a Marinara or Bolognese sauce.
    I think the original was made with Veal. Not sure though.

  3. Thanks to this channel and the great chef instructor that he is I’ve been able to extremity enhance the cooking in my house. I’m 57 and purchased my first cast iron skillet about four months ago. I’ve been making dinners for my fiancé and my Son and have received great reviews. Tonight I cooked Chicken Marcela and was very nervous about it. It use to be my go to dinner in restaurants when I would order. So trying it myself was nerv-racking. Thanks to this channel it truly was an amazing dish and she said it was my best dish yet. I actually get excited about cooking.

  5. Made this recipe but doubled it (make 2 batches, don’t actually double it, makes for better consistency) for 6 people hoping there would be leftovers..it got demolished! Guess I gotta get takeout for lunch tomorrow. Also seasoned the chicken (and mushrooms) with montreal steak seasoning instead of salt and pepper before dredging with flour

  6. This is fantastically illustrated recipe content. Spot on and essentially simple. Measurements included. Not overrun with do without ingredients. Shallots if not fine. Thyme spice, parsley garnish ok. No onion? Alright now.
