This isn’t just chicken noodle soup, it’s a warm hug in a bowl. Perfect for chilly days, or when you just need a little extra comfort. Watch how to make the easiest, most flavorful soup that will have your whole family asking for seconds (or thirds!).
Recipe:
2 chicken breasts or thighs (boiled or rotisserie will give you better texture, but you can cube and cook straight into soup if in a hurry)
1 onion diced small
1 carrot diced very small
1 stick celery diced small
2 cloves garlic minced
8 cups chicken broth or stock
6-8 oz egg noodles
1 Tbsp fresh thyme leaves
2 Tbsp olive oil
Salt
Fresh cracked black pepper
parsley for garnish
*optional 2 cups chicken bone broth
*optional 1/2 tsp red pepper
Prepare vegetables and chicken (be sure chicken cooks to 165F internal)
Bring dutch oven to medium heat and add olive oil.
Add carrots, celery, and onion and cook until onion translucent.
Add garlic and cook for another 60 seconds or until aromatic.
(If chicken is uncooked add now, and mix with ingredients for around 1 min, if already cooked add after broth.)
Add broth, deglaze and bring to boil, reduce immediately to simmer.
Add thyme ( and chicken if precooked)
Add salt, pepper, and red pepper to taste.
Let simmer on low for at least 20 minutes.

I can’t wait to make this because anytime we were sick my Mom always made us chicken noodle soup 🥣. It just makes you feel better. We were snowed in this weekend and I made taco soup and it was good! This morning I took some chicken breasts out of the freezer for tomorrow. Now I know what I am going to make. I DO HAVE A QUESTION: How do you keep the scum from forming on the top when you cook with raw chicken? You lifted the lid to add the noodles, and there wasn't one bit of scum on top. I always have scum on the top that is hard to get it all. Thanks for another great recipe and the idea for dinner tomorrow.

When making a big pot of soup for more than one meal, only add noodles to what you are using right away. Store the rest in the fridge or freezer without noodles and cook more as needed.

Yum! I have my turkey carcass frozen from Christmas day so I'm whipping that baby out this week and making soup. I NEVER throw away my turkey bones. Looking forward to it. No little kids any more so rarely a cold or flu in the house but we'll enjoy the soup regardless. One habit we've gotten into now that we're somewhat empty nesters, we've graduated to 'adult' crackers😂. You probably can't get them down there bc they're made by Dare, but they're called Vintas. There's original and roasted red pepper but the one that goes with c.n. soup is the Rosemary-Olive oil 😋 Maybe Amazon has them? You'll love'em!

That looks soooo good. I think if I cook it, I'll use boneless, skinless thighs. Much prefer the dark meat. And maybe add just a little butter. Butter makes everything better.
