INGREDIENTS FOR LEFTOVER CHICKEN PATTIES:
►4 cups shredded cooked chicken
►2 large eggs
►1/3 cup mayonnaise
►1/3 cup all-purpose flour
►3 Tbsp fresh dill, finely chopped (or parsley)
►3/4 tsp salt or to taste
►1/8 tsp black pepper
►1 tsp lemon zest, plus lemon wedges to serve
►1 1/3 cups mozzarella cheese, shredded

I make fish cakes in a similar manner, and I sometimes prep them the night before. I find, though, that the breadcrumb exterior gets mushy if you bread it in advance, and especially with Panko, the crispiness of the exterior is one of the best parts. I form my patties the night before, and refrigerate them un-breaded. Then, when I'm ready to cook, dip in beaten egg, and then into breadcrumbs as you do here. Best of both worlds, and the outside is crispy and delicious!
