This is one of my favorite recipes of yours and I've made it a bunch of times as written. It's fantastic! But recently I had more people over and doubled the recipe and had a bit of a disaster: the rice didn't cook in the amount of time and I had to take out the chicken and keep cooking the rice. What did I do wrong? How does one double this recipe and have a nice presentation?
Where do I find the recipes to your delicious meals?
Could you use brown rice or wild rice with this and would that change the cooking time?
I imagine if I use brown rice I may need to use more liquid?

Have found that skin on chicken adds too much fat to the bake and results in a gloppy rice.
