Chicken Roast Recipe by Food Prescription

Ingredients:
· Cumin seeds 2 tsp
· Coriander seed 1 tsp
· Peppercorns 1/2 tsp
· Red chilli powder 2 tsp
· Kashmiri red chilli.powder 2 tsp
· Salt 1 tsp
· Tamarind juice 3 tbsp
For the red paste:
· Roast coriander, cumin seeds and peppercorns until it turns aromatic
. Blend the above roasted spices along with the other powdered spices
· Add the red paste and dahi to the chicken and allow it to marinate for 30 minutes
. Add the red paste to 500 gram chicken and dahi to it.
. Add lemon juice and mix very well.
Marinate for 30 minute.
. After marination, add 1 tsp of ghee and 2 tsp.of oil in a pan, add the marinated chicken to it.
. Add lots of chopped coriander leaves and 1 tsp of salt to this.
. Cover and cook for 25-30 minutes. Add 1 tsp of ghee & lots of curry leaves, and cook for another 5-7 minutes.
. Serve it hot with some onion rings and lemon wedges.
