Ingredients for the Chicken Sukka Recipe :
– Chicken, curry cut with bones- 1 Kg
To Make the Masala Powder:
– Cumin Seeds-1 tsp
– Fennel seeds (saunf)-1 tsp
– Black Peppercorns- 1.5 tsp (30 nos.)
– Green Cardamom-4
– Cloves-4
– Cinnamon-3 small
Tempering-
– Fennel Seeds-1 tsp
– Curry leaves-20-25
– Onions chopped- 2 small (120 gms)
Other Spice Powders:
– Turmeric Powder- 1/2 tsp
– Red Chilli Powder-1 tsp
– Coriander Powder- 1 tsp
Other Ingredients:
– Tomato, chopped- 1 medium
– Ginger Garlic paste- 2 tsp
– Green Chillies slit and cut- 2
– Curry leaves-15-20
– Coriander leaves chopped- 2-3 tbsp
– Groundnut oil-8 tbsp
– Salt-2 tsp
Preparation:
– Dry roast the whole spices on low heat for 2-3 mins. Remove to a pan to cool. Grind to a powder. Use 3 tsp of this Spice blend in the curry.
– Chop the onions.
– Also chop the coriander leaves and slit and cut the green chillies.
Process:
– Heat oil in a kadhai and then add the fennel seeds . Give a stir and then add the curry leaves. Stir and fry for a minute and then add the chopped onions.
– Fry on medium heat for around 6-7 mins till little brown.
– Now add the ginger garlic paste and give a mix.
– Fry on medium heat for 2 mins till raw smell is gone.
– Now add the chicken, turmeric powder and salt and fry on medium heat for 3-4 mins till light brown.
– Now add the red chilli powder and coriander powder, mix and fry on medium heat for 3-4 mins till browned.
– Now add the chopped tomatoes, mix and cook on medium heat for 2 mins.
– Now lower heat to minimum and cover & cook on low heat for around 12 mins.
– Remove lid and cook on high heat for around 2-3 mins to dry out any extra water that is there.
– Now add 3 tsp of the blended spice powder which we made earlier and mix and cook on medium heat for around 3-4 mins.
– Now add the sliced green chillies, curry leaves and chopped coriander leaves.
– Mix and cook on medium heat for around 2 mins and then serve.
