Have you ever thought of doing a rotisserie Al pastor in the chud box? Or finding a way to a direct heat in a vertical rotisserie?

I wouldn't worry about how dark your chili oil is. My wife is from China. She makes everything from scratch. Dumplings, wontons, and yes, chili oil. And it's off the charts. I've been to China 4 times. Her chili oil and the chili oil I've tried in China are dark in color. I'm going to have to show her this video. And make some of this chicken for her. Lol.

I’ve been loving the Laoganma chili crisp lately. I’ve heard it’s a staple of many Chinese families. I haven’t tried Fly By Jing but it’s triple the price of Laoganma at my local Walfart so I think I’ll stick to that one.

Hello, can you come up with a great recipe for pork belly steak? Wild fork sells them and they’re super cheap. I make them for my family on the Weber kettle all the time but I’m looking for a way to jazz it up. During these tough economic times, it would be greatly appreciated.

Man, that looked good. I get a whole chicken and cut it in half, then break it in to 1/4s after cooking. $10 for a whole chicken it's cheap lunch!
I wonder, you get rid of the garlic skin first, slice it sideways and then chop it. Why not crush it with skin so it comes off more easily and then chop it? Then you don't need to peel and slice it sideways.
