This is a chimechanga, not an egg roll. And cooking the vegetables is a waste of time and energy. But, a really nice version of a classic appetizer.

Toothpicks. I've made these before (although with different cheese that's melted into the actual filling). A toothpick and freezing or chilling them helps a lot.

Should have incorporated the cheese in the filling before rolling. Butter wash the final flap of the tortilla and allow it to set up before deep frying… can also pan fry… or oven roast (egg wash the entire outside)
