Made in the air fryer in under 30 minutes, this quick and easy recipe is bursting with tropical flavour! The sweetness of mango, the zing of lime, and the kick of chilli come together to create the ultimate flavour combo. It’s sticky, succulent, and absolutely irresistible.

Ingredients
1 kg Chicken thighs/drumsticks (skin on, with bone)

For the marinade –
1 Large ripe mango, roughly chopped
1 Red chilli
1 Lime, juiced
1 tbsp Olive oil
1 Small red onion, roughly chopped
1 tsp Garlic, minced/paste
1/2 tsp Ginger, finely grated or a paste
1 tsp Coriander powder
1/4 tsp Brown sugar (optional)
1/4 tsp Turmeric powder
1/4 tsp Ground black pepper
1 tsp All purpose seasoning
1 tsp Paprika powder
Salt to taste

Garnish
A handful of fresh coriander, finely chopped

Step 1 – In a blender, add all of the ingredients for the marinade plus 1 tbsp water. Blitz till smooth. Test for salt.
Score the chicken pieces and pour 3/4 of the marinade over the chicken, mix well to coat. Marinate for at least 2-3 hours. Reserve the remaining marinade.

Step 2 – Place the chicken pieces on to the air fryer tray, skin side down. Set to 190c for 25 minutes, turn half way through the cooking time and brush on the remaining marinade. Once the cooking cycle is complete, check the chicken is cooked through with a meat thermometer.

Step 3 – Remove from the air fryer and transfer to a plate, garnish with freshly chopped coriander and serve with sticky rice! Enjoy.
