Chinese Beef & Egg Fried Rice (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Ingredients:
500g Cool Cooked Rice
250g Lean Mince Beef
1 Onion
2 Spring Onions
3 Tbsp Dark Soy Sauce
3g Sugar
1 Tsp Sesame Oil
2 Eggs
120g Garden Peas
1 Tbsp Cooking Wine
1 Tsp Cornflour
Salt to Taste

Method:
1. Finely chop the onion and spring onion
2. Place minced beef into a mixing bowl, add a pinch of salt, 1 Tbsp soy sauce, cornflour and 1 Tsp oil. Mix well
3. Breaks eggs into a bowl and beat till light yellow
4. Place sugar, the remaining soy sauce, sesame oil in a bowl and add 1 Tbsp of boiled water. Mix well
5. Heat 1 Tbsp oil in the wok, add the egg and stir-fry for 2 minutes. Remove from wok
6. Place the minced beef into the hot wok, stir-fry for 5 minutes, remove from wok
7. Heat 1 Tbsp oil in the wok, add onion and fry for 2 minutes
8. Add the rice to wok and stir-fry for 2 minutes
9. Pour half of the sauce from step 4 into the wok, stir-fry for another 2 minutes
10. Add the beef, egg and peas, stir fry for a minute
11. Pour the remaining sauce from step 4, add spring onion and fry for 30 seconds
12. Transfer to a dish and serve
