I have made this sooo many times including today. I started to venture into adding sichuan pepper corns & garlic too. hello! I boiled over high heat for a very long time, but the sauce wouldn't thicken. What would you say I did wrong? I followed every step carefully. The pork belly tasted great and extremely tender, but the sauce wasn't what I wanted in terms of thickness.

I wonder if this would work well with boneless beef short rib. Pork has a better affinity for sweet, but I cant imagine it not tasting good.
