CHOCOLATE CHIP BANANA BREAD RECIPE made with Cottage Cheese

2-3 super ripe bananas (250 grams), mashed
1/2 cup low-fat cottage cheese (110 grams)
1/4 cup maple syrup (85 grams)
3 eggs (or 175 grams of liquid egg whites)
1 teaspoon vanilla extract
2.5 cups almond flour
1 teaspoon baking soda
1.5 teaspoons cinnamon
1/2 cup chocolate chips + extra to sprinkle over the top

Preheat oven to 350°F. Lightly grease a loaf pan and line it with parchment paper.

In a large bowl, combine mashed bananas, cottage cheese, maple syrup, eggs, and vanilla extract. Mix until well combined.

Add almond flour, baking soda, and cinnamon. Mix until everything is combined and you have a nice, hearty batter. Fold in the chocolate chips.

Transfer the batter to the prepared loaf pan. Sprinkle extra chocolate chips over the top if desired.

Bake in the oven for 50-55 minutes until lightly browned on top and set through the center.

NOTE: Check the banana bread at the 20-25 minute mark. If it is browning too quickly, place a piece of foil over the top of the bread for the rest of the baking time.

  1. Hi Dani, this looks great and I'm a new fan of cottage cheese. It seems like quite a bit of fat, even good fat, compared to protein per serving. What do you think about going 1/2 almond flour and half maybe a keto flour to bump up protein and drop some fat? Thanks!

  3. Looks delicious! but aluminum foil is toxic when it comes to cooking.
    Some protein powders sold in the U.S., have led!, so an egg is the sunstitute for protein. Can you do recipies for ppl with dairy and nuts sensitivities?

  4. Your bread sounds delicious and I will give it a try. I would really question your baking pan, it's colored, and maybe it's aluminum, and probably non stick. Non stick is not healthy at all, all that toxic non stick stuff eventually ends up in your belly, and aluminum has proven to cause medical problems. We just don't know what those chemicals do while being heated. Plus the aluminum foil on top, aluminum has been known to cause memory issues as we get older…. The parchment paper is great because your bread is going to be sitting on that and not the pan itself, but I would not want to use that pan without parchment. Stainless steel is the safest. Since you have such healthy ingredients, I would not want to ruin the health of your bread, by using a questionable pan.
