  1. So you made a derby pie on a smoker. Christ sakes everybody wants to be a chef lol. Let you in a secret. Pay is terrible , no insurance and the hours suck. Go be a plumber and and be happy.

  2. I made this last Thanksgiving following Matt's recipe. Very delicious. Very rich. It's on my Thanksgiving/Christmas holidays recipe list now. All of my family loved it.

  3. The pie crust portion of the disk looks flabby. I would suggest bling baking the bottom pie crust for 350F for 10 mins. to get a more crispy outcome. I would also look at possibly doing the same dish with a gram cracker crust. Alton Brown has an amazing breakdown of this concept in one of his Thanksgiving Special.
