The pie crust portion of the disk looks flabby. I would suggest bling baking the bottom pie crust for 350F for 10 mins. to get a more crispy outcome. I would also look at possibly doing the same dish with a gram cracker crust. Alton Brown has an amazing breakdown of this concept in one of his Thanksgiving Special.
