I am Japanese. I usually make this rolls with AP flour, 5% of sugar and 5% of butter, but I don’t add milk powder.
The dough is just like enriched baguette one, so I also use steam to give it more lift🙂

Ohhh, I have these from Japan – amazing. They aren’t really crisp, mainly soft with a butter crust. To be honest, I saw the bakers literally POUR melted butter on the rolls. Not daintily brush it on!
We had these in Korea but they filled the inside of them with different filling so they were salty in the outside and sweet on the inside
