  1. Awesome video!! I've fallen in love with pork steaks since visiting Snows (never heard of them before) Cant wait to have a go at making these on my KJ!! Great seeing the fun drinking side of these vids too

  2. I just cooked some big thick pork steaks on my drum smoker. No need to wrap. The fat stays nice and crispy and renders out. Wrapping it will just make it soggy. I love cooking pork steaks over direct heat like that.

  3. Pork Steaks have been a thing in St. Louis for many, many years. Glad to see other areas are getting on the bandwagon.

    I usually glaze with a maple Mustard sauce and finish/caramelize it on a hot grill. Maple Mustard Sauce is yellow mustard, maple Syrup, a healthy amount of black pepper, salt, and a bit of Pepsi to thin the sauce. Just brush it on over the hot grill. They end up sweet, tangy, and a little bit of heat.

  5. Congrats on your move! I drive by your spot every day since I live right down the street and I was surprised to see a familiar name! Haven't caught any BBQ action yet, but I'm hoping ya'll are succesful
