Seven years late to the party. Pretty sure wishlisted this when the video came out, but only got around to making it last night. Now that I have…kicking myself for seven years when I could have made this again and again. Absolutely fantastic – rich, sweet, savory, and incredibly filling. As someone who tends to go more for riots of flavor like rendang, it's a little shocking the depth of flavor that comes out of essentially pork, sage, cider, and a little dairy. Practicum note: I was expecting this to take the full three hours of braising, but after two the meat was already at the falling-apart-when-you-look-at-it stage. So: not the ideal texture, but who cares when it tastes this good? Bring on the meat pudding!

I don't know what I did wrong. We followed the instructions exactly. The ⅓ cup of apple cider vinegar was WAY too much, we couldn't taste anything else. I used all recommended ingredients, we tried adding more creme fraiche, we added heavy whipping cream, we even tried adding some pure apple juice for some sweetness but the vinegar taste just would not yield. First time I have ever been disappointed in a Chef John recipe, so I have to know how I botched it.

what to do if add too much vinegar??
I could be wrong, but my understanding is that a stew is when the meat cooks while completely submerged in liquid, and a braise is when it cooks only mostly immersed in liquid. So what you did is a braise, not a stew.
Made this exact recipe today with exception (I used 1 teaspoon of dried sage because i could not find fresh) And it’s totally delicious. Chef johns Spätzle can stand on its own but paired with pork braised in cider its over the top. Definitely will be on my fall/winter rotation. I have yet to come across a chef john recipe thats not excellent 💪

I absolutely love delicata squash. It is so delicious you can roast it with the skin on and eat it. A little olive oil and salt is all you need delicious!
