CHOCOLATE WAFERS
1½ cups all-purpose flour
½ cup unsweetened cocoa powder
¾ teaspoon kosher salt
½ teaspoon baking powder
1 stick unsalted butter, at cool room temperature
¾ cup sugar
1 large egg

CRUST
7 ounces chocolate wafer cookie crumbs
4 tablespoons unsalted butter, melted and cooled
1 large egg yolk
Pinch of salt

MINT CHIP ICE CREAM
2 cups heavy cream
1 cup milk
2 peppermint tea bags
½ cup plus ¼ cup granulated sugar
6 large egg yolks
1 teaspoon vanilla extract
2 drops green food coloring
Pinch of salt
5 ounces semisweet chocolate, melted and cooled

ASSEMBLY
1 cup heavy cream, chilled
2 chocolate wafers, crushed

  1. Yummm! Our local grocery store chain (HEB) stocks Grasshopper Ice Cream, which is basically cookies & cream with a mint base instead of vanilla, and MAN is it good – it's like if they took your whole pie and mixed it up into ice cream form.

  2. I was so bummed when they decided to retire the Famous Chocolate Wafers by Nabisco! I grew up with my mom using them to make icebox cakes. I found an excellent recipe for chocolate wafers from the BRAVETART cookbook by Stella Parks, but I’m going to try Claire’s version, but with black cocoa powder.

  3. Thank you for being so brave and standing up against Big Spearmint, I cannot stand that flavor because of how much it reminds me of toothpaste. Peppermint, though, is one of my favorite flavors, and I will absolutely be making one of these pies this summer.

  4. I looove mint chocolate chip ice cream but hate ending up with a mouthful of unmelted, very thick chocolate pieces. The Stracciatella is the way to go. Ben & Jerry's Mint Chocolate Cookie is my favorite (and possibly the speediest way to get this flavor combo).

  5. Claire, what do you think of adding peppermint essential oil? I'm thinking it could make it too bitter, so I'll just stick to the tea (brilliant idea, by the way).
    Also, I don't have an ice cream maker but I'ma make it by hand, Claire Saffitz is my saint patron, I'm not afraid of anything.
