2 cups heavy cream
1 cup milk
2 peppermint tea bags
½ cup plus ¼ cup granulated sugar
6 large egg yolks
1 teaspoon vanilla extract
2 drops green food coloring

5 ounces semisweet chocolate, melted and cooled
ASSEMBLY
1 cup heavy cream, chilled

Yummm! Our local grocery store chain (HEB) stocks Grasshopper Ice Cream, which is basically cookies & cream with a mint base instead of vanilla, and MAN is it good – it's like if they took your whole pie and mixed it up into ice cream form.

I was so bummed when they decided to retire the Famous Chocolate Wafers by Nabisco! I grew up with my mom using them to make icebox cakes. I found an excellent recipe for chocolate wafers from the BRAVETART cookbook by Stella Parks, but I’m going to try Claire’s version, but with black cocoa powder.

You could probably use a tiny bit of purple food coloring to counteract the yellow color from the yolks and get a brighter green

I looove mint chocolate chip ice cream but hate ending up with a mouthful of unmelted, very thick chocolate pieces. The Stracciatella is the way to go. Ben & Jerry's Mint Chocolate Cookie is my favorite (and possibly the speediest way to get this flavor combo).
