Here’s a classic Southern Pork Chops and Gravy recipe that’s tender, flavorful, and comforting:

Ingredients (Serves 4)
For the Pork Chops:

•4 bone-in pork chops (about 1 inch thick)
•1 tsp garlic powder
•1 tsp onion powder
•1 tsp paprika
•1/2 tsp cayenne pepper (optional)
•Salt and pepper, to taste
•1/2 cup all-purpose flour
•3 tbsp vegetable oil or bacon grease

For the Gravy:
•2 tbsp all-purpose flour
•2 cups chicken broth (or water with 1 bouillon cube)
•1/2 cup milk or heavy cream
•Salt and pepper, to taste

Instructions

1. Season the Pork Chops:

Pat the pork chops dry with paper towels. Season both sides generously with garlic powder, onion powder, paprika, cayenne (if using), salt, and pepper.

2. Dredge in Flour:

Place the flour on a plate. Lightly dredge each pork chop in the flour, shaking off the excess. Reserve about 2 tablespoons of the flour for the gravy.

3. Cook the Pork Chops:

Heat the oil or bacon grease in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove the pork chops and set them aside on a plate.

4. Make the Gravy:

Lower the heat to medium. Add 2 tablespoons of the reserved flour to the skillet and whisk it into the drippings, cooking for 1-2 minutes to create a roux.

Slowly add the chicken broth, whisking constantly to prevent lumps. Stir in the milk or cream and let the gravy simmer until thickened, about 5 minutes. Season with salt and pepper to taste.

5. Simmer the Pork Chops:

Return the pork chops to the skillet, nestling them into the gravy. Cover and simmer on low heat for 20-25 minutes, or until the pork chops are tender and cooked through (internal temperature should reach 145°F/63°C).

6. Serve:

Serve the pork chops smothered in gravy over mashed potatoes, rice, or biscuits. Garnish with chopped parsley if desired.

  2. One of my favorites from my youth… southern cooking…gravy with fried chicken or fried pork chops and kale greens, mashed potatoes and biscuits or corn bread. Yum…😋. My Granny and Momma were great southern cooks.. I was raised on comfort food. We had chicken and noodles at school and at home..a staple. Some of my adult grandchildren are loving raw fish as a comfort food. Sushi …. If some mommas don’t cook anymore what do you expect? I still cook…. My chicks have flown the nest many years ago… however, I still cook comfort food.
