Coconut Guava Cookies || Quick & Easy || Tropical Dessert Recipes

Hey everyone! So today we are making these incredible little coconut guava cookies and this recipe seriously needs to be doubled every time because everyone could never get enough of these! The secret to getting these perfect is by toasting the coconut which will really bring out its flavor and texture. The next tip is to be sure that you are using unsweetened coconut because the guava paste is so sweet that the balance of the two will be so perfect! Ingredients:
2 egg whites
1/4 cup sugar
2 cups Toasted unsweetened shredded coconut
6-8 ounces guava paste

Directions:

Preheat oven to 350 F.
Start off by whipping your egg whites with the sugar until stiff peaks form about 5 minutes.
Next fold in the toasted coconut and cut up pieces of guava paste.
Place spoonfuls of the mix onto a silicon lined baking sheet.
Bake these cookies for about 14-16 minutes.
