2 cups (200 g) Dry Coconut Powder
1/2 cup Powdered/Icing Sugar
200 ml Condensed Milk
1/2 tsp Vanilla Extract

For Homemade Food Colour:

Seeds of 1 Pomegranate
1/2 tbsp Powdered Sugar
1/2 tsp Cornflour
1/2 tsp Lemon Juice

Homemade Food Colour

1. Blend pomegranate seeds to extract juice, then strain.
2. Add sugar to the juice and mix.
3. Heat in a pan, stir in cornflour, and cook until it thickens. Add lemon juice.
4. Once reduced to half its original consistency, cool and store in an airtight container.

Coconut Ice

1. In a bowl, mix coconut powder, sugar, condensed milk, and vanilla to form a soft dough. Rest for 10 minutes.
2. Divide the dough in half.
3. Press one portion into a mold as the base layer.
4. Mix the homemade food colour into the second half until it’s well incorporated. Layer it on top of the white layer.
5. Press to set, refrigerate for 1 hour, then let sit at room temperature for 10 minutes.
6. Slice into squares and serve!
