Peel and remove the black vain. Place in bowl squeeze lime to cover
Place in fridge. Chop red onion, garlic,Serrano.
Cucumber,avocado. Add all ingredients into a container add salt to taste. Any vinegar you like and Blanco Tequila.
Yup always made curly shrimp when I line cooked at a major chain.
Undercooked shrimp May make you very sick from pathogens. Slightly over cooked shrimp, will not, unless it was already toxic to begin with. I would like my shrimp fully cooked if you don’t mind, just in case.
My method is to bring a pot to a boil, add shrimp, close heat and cover…juicy cooked shrimp a few minutes later

Why not cold broth?
Matter of preference, I prefer something closer to the overcooked side.
I bring water to a boil, remove from the heat, dump in my shrimp, put the lid on for 3 minutes, and drain. I always have perfectly cooked tender shrimp no matter the size of shrimp.
Nothing worse than rubbery shrimp. You want a Lil of that shellfish bite, but not sausage snap. 🤮
Or… gently poach them in butter.
I use baking soda to help keep the shrimp from overcooking
