Cooking pork rinds and potato for whole family – Welcome home (6 year milestone)

Today, May 4th, 6 years has passed. Let’s celebrate this day.

ingredients:
one small block of pig fat
two onions
three potatos
salt, pepper for taste

instructions/recipe:
take slab of pork fat. salted is best. can be with rind (skin) or not.
cut pork fat into slim squares. not too slim. watch video.
heat up your fire-burning stove. put pan on. no oil.
put pork fat on hot pan.
cook until pork rinds have reduced to small size.
remove rinds and leave for later snack with drink.
add sliced onion and potato on the fat that remains on pan.
cook until golden brown.
serve. done.

    This video reminded me of long-ago stories of my great-relatives. I believe one of my great-grandparents had a wood stove. My great-uncle raised a pig, and I remember when the pig was turned into meat and cracklings (skin on) for the gathered families. They cooked pig fat with beans instead of potatoes. There was apparently a lot of drinking among the men, and the first shot just made the pig mad. So yes, the methods were cruel by today's standards, but it was a time for the extended family to gather & eat together.
