Instead of cutting your ribs up put them on a wire rack with sheet pan. Then the pan will catch all the greese which you can then keep the grease in a jar in the fridge and use it to cook with.

I remember when beef ribs, short ribs, ox tails, chuck roast, turkey wings were all really affordable cuts. Now the beef cuts are for special occasions only and try to buy on sale and freeze. It seems to me when the keto diet became the rage then all the fatty cheap cuts went way up in price and never came back down, then Covid, now inflation 🤷♀️. Short ribs low and slow is one of my favourite meals, haven’t had it in ages.😥. Eat well everybody and be safe!
