Watched your video at 1 o’clock in the morning. When you got to the point where you’re holding a sliced piece, beautiful bark, moist, juice dripping…I started frantically googling a 24 hour BBQ joint. Great video and like another commenter said, nice you can do it in an oven (and not need a $20,000 smoker!)
The unusable trimmings are great for dogs. Chop it up, boil for a few minutes, and mix with their food. Or, if you're using raw food for dogs, mix it in with your existing food.

Briskets cooked in an oven should be outlawed in every of country. Using an offset with real fire, post oak and low and slow, with a rest time of 12-16hrs at 150 degrees is the way to go.

I’d give anything to own a knife as sharp as yours. I’ve been cooking briskets in the oven for over 40 years. I marinate them overnight then cook them low and slow for 6-10 hours, I got my recipe from a cousin and every time I’ve taken one of my briskets to a pot luck everyone wants the recipe, same for my not actually baked beans, I got the recipe for them from my ex husband’s auntie and they are yummy. I can’t handle smoked food anymore, years ago I went to a BBQ restaurant because that’s what my grandson wanted for his birthday dinner, even the banana pudding had a smoke flavor. I just had a DrPepper. 😂
Use a water bottle to spray down the butcher paper prior to wrapping. It will be slightly damp and you will get a tighter wrap on the brisket. It will be more pliable and easier to work with.
