2.5 lbs pork belly
Ground black pepper
500ml dark beer
1/3 cup soy sauce
2 tbsp rice vinegar
1 tbsp sugar
2 tsp Chinese five spice
3 large garlic cloves
1 inch thick piece of fresh ginger, sliced
4 green onions ( white parts )
1 cup warm water

Aldi has pork belly from time to time. Might be a little cheaper than Costco but not available as often. Same for their lamb breastplate which probably works well with similar recipes due to its high fat content.
It's hard to mess up pork belly and this looks good but i prefer pork belly crispy. Just personal preference. But would eat it if available!
I brought the same size pork belly at Costco. I removed one pound and vacuumed sealed the rest into one pound portions. I boiled the entire slice in water with ginger, garlic and anise for 5mins, skimming off the impurities. After the pork was cool enough to handle, I sliced the strip into 1.5" cubes. While I was slicing the cubes, I had my Instant Pot set to saute, with enough veggie oil to cover the bottom, with 2tbs of brown sugar. When the sugar started to brown, I added half the pork cubes, let them brown, while keeping a eye on the sugar. I removed when brown, added more oil and sugar and browned the second batch. When the second batch was done, I added the first batch back to the liner with Shaoxing wine, light and dark soy sauce, 2 bay leaves, more ginger, green onions and 1 cup of water. Locked the lid and set to cook for 15mins. I let the IP natural vent for 20mins, and then vent. I don't boil to thicken the sauce because I usually use the pork in stir-fries, noodle and/or rice bowls. I freeze what I don't eat right away,,
Top that with white rice and an egg roll⦠and its better than take out. Great recipe.
Pork bellyβs practically the same price as finished bacon. Ridiculous.

Here in the states the sliced pork belly at Costco is cut thinner so I buy the uncut pork belly and slice it myself. After simmering I would use a fat separator and strain the liquid because of all the fat. Adding a veg like broccoli and mushrooms looks great, will give this a try.
