Ingredients:
1 cup cottage cheese (strained for a thicker texture)
2 large eggs
2 tbsp psyllium husk powder (for structure and elasticity)
1/4 cup almond flour
2 tbsp coconut flour
1/4 cup grated Parmesan cheese
1/4 tsp xanthan gum
1/4 tsp salt
1/8 tsp garlic powder (optional, for flavor)
1 tbsp butter or ghee (for frying)
Instructions:
Prepare the Dough:
Blend cottage cheese and eggs in a food processor until smooth.

I would use a tortilla press, then cook the tortilla and cut it in to noodles after. Like an aldi egg wrap.
Dave, I just made the noodles, but rolled the batter out in a jelly rill pan and baked at 375 fir about 20 minutes. Perfect n tasty. I’m making lasagna with mine. Thanks for sharing. 🎉
Just bake them on the sheet pan in the oven for 15 minutes at 325. So much easier. Then if you want it fried, then toss them in hot butter.
Look on your website for a pasta cutter. It looks just like a pizza cutter but has 5 perpendicular blades. Achieves symmetry
Farmers cheese or pot cheese is dry and is the same as cottage cheese. Back in the 1970's these 2 cheeses were super easy to find, nowadays, not so much.

Dave you should look up paneer cheese and add a little salt. You can make a gallon batch and after pressing you have drained cottage cheese
