Given its current “it” status at the top of the dairy ranks (Greek yogurt who?), we headed into the Trader Joe’s test kitchen to answer the aforementioned question, and ended up with a Trader Joe’s protein-packed dessert recipe we’re calling “Cottage Cheesy Lemon Freezy,” featuring our very own Trader Joe’s Small Curd Cottage Cheese!
You’ll blend our Cottage Cheese in a food processor to create a smooth & creamy backdrop for ribbons of tangy Trader Joe’s Lemon Curd and crushed Trader Joe’s Meyer Lemon Cookie Thins and chopped almonds. Once frozen, this sweet, tangy treat takes on an ice cream-esque texture… and it offers an impressive amount of protein per serving!

0:05 | Crush 1 sleeve TJ’s Meyer Lemon Cookie Thins
0:15 | Chop 1 cup TJ’s Almonds
0:22 | Empty 1 jar TJ’s Lemon Curd into a bowl
0:32 | Place 1 qt. TJ’s Cottage Cheese in food processor; blend until smooth.
0:45 | Fold Cottage Cheese into Lemon Curd
0:53 | Fold in crushed cookies & chopped almonds
1:00 | Spread mixture into freezer-safe container
1:06 | Freeze until firm & enjoy!
