Tomato and Mozzarella Pasta
Ingredients:
8 oz. dried pasta
2 tbsp olive oil
3 cloves garlic, minced
2 cups cherry tomatoes, halved
8 oz. fresh mozzarella cheese, sliced or diced
1/4 cup fresh basil leaves, chopped
Salt and black pepper, to taste
Instructions:
Cook the pasta in a pot of boiling salted water according to package instructions until al dente. Drain and set aside.
Heat the olive oil in a large pan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
Add the cherry tomatoes to the pan and sauté for 5-7 minutes until they start to soften and release their juices.
Add the cooked pasta to the pan with the tomatoes and toss to combine.
Add the sliced or diced fresh mozzarella cheese to the pan and gently stir until the cheese begins to melt.
Add the chopped fresh basil to the pan and stir to combine.
Season with salt and black pepper to taste.
Serve hot, garnished with additional basil leaves if desired.
