RECIPE:

Cookies :
70g of butter
80g hazelnut butter
1 vanilla pod
20g hazelnut paste
200g brown sugar
80g Muscovado sugar
8g fleur de sel
3g baking soda
320g flour t55
70g of eggs
150g chocolate (options)
100g roasted hazelnuts

Make a hazelnut butter with the vanilla pod and leave to harden in the fridge. In the bowl of a mixer with a leaf, mix the 2 butters cut into cubes at room temperature, the brown sugar and the Muscovado sugar for 2 mins at medium speed. Add the eggs mix 1min. Add the flour, fleur de sel, hazelnut paste and baking soda. Stop as soon as the dough begins to form. Add chocolate and chopped hazelnuts. Form 100g balls and flatten them slightly. Leave 1 hour in the fridge. Bake for 10-12min at 170C depending on your oven.
