300 g semolina
225 g sugar
100 g cream
1 handful of pine nuts
1 cup water
1.5 cups milk
2cloves
1 teaspoon cinnamon
A pinch of salt
1. For the syrup, combine sugar, water, and milk in a saucepan. Stir to dissolve the sugar, being careful not to boil, as this can cause the syrup to crystallize when cooled. Once the sugar is fully dissolved, remove it from heat.
2. For the halva toast the pine nuts in a wide-bottomed pot until golden. When they toasted add cream and stir well.
3. Add semolina and roast, pressing with the back of a spoon to ensure even toasting.
4. Crush the tops of cloves with your fingers and add them to the mixture. Gradually pour the hot syrup over the roasted semolina while stirring continuously. This prevents clumping and reduces splattering.
5. Sprinkle cinnamon and salt over the mixture. When the halva thickens, turn off the heat and cover the pot. Let it rest for 6-7 minutes to steam and absorb the flavours.
6. To serve scoop the halva into portions using an ice cream scoop or mold it into shapes using a cake mold. Serve warm and enjoy!
