Ingredients:
– 6 boneless, skin-on chicken thighs
– 1/2 cup shredded cheddar or mozzarella cheese (or a mix of both)
– 1 tbsp chopped fresh parsley
– 1 tsp garlic powder
– Salt and pepper, to taste
– 1/2 cup BBQ sauce (your favourite variety)
– 1 tbsp olive oil (for greasing the dish)
– Slices of processed burger-type cheese (optional)
Smokey Honey-Sriracha BBQ Sauce
Ingredients:
– 1/2 cup ketchup
– 1 tbsp honey
– 1/2 tbsp sriracha (adjust for heat preference)
– 1/2 tsp smoked paprika
– 1 tbsp white vinegar
– 1 tbsp brown sugar
– 1/2 tsp yellow or Dijon mustard
– 1/8 tsp salt (a pinch, or to taste)
– 1/8 tsp freshly ground black pepper
Optional Additions:
– 1/2 tsp Worcestershire sauce
– A pinch of garlic powder or onion powder
Preheat your oven to 375°F (190°C).
Bake in the oven for 25-30 minutes or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
Remove – glaze with BBQ sauce – return 5 mins.
