CRISPY BEEF TACOS

Recipe
Ingredients
– 1 lb ground beef
– 1 large white onion
– 2 large jalapeños
– 2 poblanos
– 3 large cloves of garlic
– 1/4 cup taco szn
– 2 tbsp tomato paste
– Neutral oil
– Corn tortillas
– Monterey Jack cheese
– Salt to taste
– Lard (optional)
Taco SZN
– 1 tbs salt
– 1 tbs black pepper
– 1 tbs paprika
– 1 tbs chili powder
– 1 tbs garlic powder
– 1 tbs onion powder
– 1 tbs cumin
– 1 tbs Mexican oregano
– ½ tbs cayenne powder
Instruction
1. Thinly slice the onion, jalapeños, and Poblano. Finely dice the garlic.
2. To a pan on high heat add lard or neutral oil. Add in the peppers and onions. Sweat down until soft. Salt to taste and remove for later.
3. Add ground beef to a pan on high heat and brown well. Add in taco seasoning. Add in tomato paste and cook until slightly brown.
4. Add in about a 1/2 cup of water, turn the heat to low and simmer until the water is mostly gone.
5. Take the meat off the heat and stir in the garlic.
6. To a pan on medium heat add a tortilla. Add cheese, meat, and onions and peppers. Fold and cook until the cheese is melted and the taco is crispy. Flip and cook until the other side of the taco is crispy.
