Crockpot Chicken and Gravy



Crockpot chicken and gravy = cozy, easy, family-friendly comfort food. Dump, cook, shred, and serve over rice or mashed potatoes. It’s that good.

🍗 Crockpot Chicken and Gravy Recipe
3–4 boneless skinless chicken breasts
2 cans cream of chicken soup
1 cup chicken broth
2 packets chicken gravy mix (less sodium if available)
Seasoning of choice. I used a little black pepper and low-sodium all-purpose seasoning

1️⃣ Place chicken breasts in the bottom of your slow cooker.
2️⃣ In a bowl, whisk together the chicken broth, cream of chicken soup, and gravy packets until smooth.
3️⃣ Season the chicken, then pour the gravy mixture over the top.
4️⃣ Cover and cook on low for 5-6 hours or high for about 4 hours, until the chicken is tender.
5️⃣ Shred the chicken right in the crockpot and stir it into the creamy gravy.
6️⃣ Serve over fluffy rice or creamy mashed potatoes for the ultimate cozy dinner.

    I make chicken breast with cream of chicken soup and add a small can of mild diced green chiles then roll a small amount of the chicken filling into steamed or corn tortillas lightly fried in oil, thenroll them into enchiladas, place them in a baking dish that you have spread just enough green enchilada sauce to create a thin layer on the bottom of the pan, then pour the remaining enchilada sauce over the enchiladas, sprinkle with Mexican cheese, add some sliced olives over the top & bake at 350° for 30 minutes. You can also make it casserole-style, layering the tortillas, chicken, cheese, tortillas, etc… then top with cheese and bake. Voila! A quick and easy family meal my kids all love.
